Baked Avocado with Egg and Bacon
- 1/2 Tablespoon extra-virgin olive oil
- 1 large ripe avocado sliced in half with pit out
- 2 medium eggs
- small pinch of salt
- small pinch of ground black pepper
- 1 slice turkey bacon chopped
- 1 scallion chopped
Preheat oven to 400F.
Spread 1/2 Tablespoon extra-virgin olive oil on a small baking sheet.
Slice 2 avocados in half and remove the pit. Place avocado halves on baking sheet.
Crack an egg into each avocado half. (The whole egg may not fit, so discard some of the egg whites).
Sprinkle salt, pepper, and bacon on top of both avocado and egg.
Bake for 15 minutes or until egg is cooked.
Garnish with chopped scallions and enjoy!
