Red Bean Tomato Almond Spinach Salad

Ingredients

  • 2 tomato slice
  • 1/4 cup spinach
  • 1/4 red onion slice
  • 1 14 oz can of organic red kidney beans drain the water and rinse beans
  • 1/4 cup almonds sliced or chopped
  • 1 dill chopped

Dressing

  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 2 Tbsp extra virgin olive oil

Instructions

  • Add tomatoes, spinach, onion and red kidney beans to a bowl.
  • Add almonds.
  • Dressing: Whisk together 2 Tablespoons extra virgin olive oil with 1/2 teaspoon of ground black pepper and 1/2 teaspoon of salt. (adjust salt and pepper to your taste)
