The fact that this salad is just titled ‘Vitamin Salad’ makes you want to have some, right?
That is certainly true for me. But this salad packs in more than just vitamins. Taking each ingredient apart, we see each one contains so many benefits! Some examples: Beets – heal acne, detoxes the blood, contains anti-aging properties. Carrots- reduce the risk of stroke, prevent cancer, boosts the immune system. Apple – give you energy, improve brain function, improve eyesight. Green Onion – anti-viral, prevents arthritis and kills bacteria. Don’t miss out on the vitamins nature has to offer!
- 1 red beet
- 2 medium carrots
- 1 apple
- 1 stem green onion
- 2 Tablespoons vinegar
- 1/2 cup water
- 2 Tablespoon extra virgin olive oil
- 1/2 Tablespoon cane sugar
- 1/2 Tablespoon salt
- Grate 1 red beet, 2 medium carrots, 1 apple, and 1 stem of green onion. ( I used a Julienne slicer).
- Dressing:In a saucepan, combine 2 Tablespoons vinegar, 1/2 cup water, 2 Tablespoons of oil, 1/2 Tablespoon sugar, and 1/2 Tablespoon salt; bring all to a boil. Turn off heat and pour over grated ingredients.
