My sister shared this salad recipe with me. I think it’s the best time of the year to share it, hint the colors! Cauliflower has a powerful effect on health. Many may not know that cauliflower is great for weight loss. It has a high source of fiber and low calories. Because of the high source of fiber, it will make you feel fuller, making you eat less and fiber is also great for digestion system.You can make a cauliflower puree,roast it, or eat it raw like this salad. This salad comes with heart health (benefits of tomatoes!) and an abundance of vitamin C.

ingredients:

  • 1 head cauliflower, chopped thinly

  • 10 tomatoes, sliced in half

  • 1 green onion, chopped

  • 1 stem fresh dill, chopped

  • 1 garlic clove, minced

  • 1 tablespoon mayonnaise

  • a pinch of salt

instructions:

  1. Combine all ingredients into a bowl, add salt to taste.
