I fell in love with squash this year. Other than Thanksgiving decor, I really didn’t know much about them. After rolling through the grocery store I spotted a corner full of colorful winter squash and picked one up, without knowing what it really was. I loved the sweet taste of the squash, I was seriously missing out of all the goodness this vegetable has.

Benefits of adding Butternut Squash

Different varieties of squash have the ability to improve your sight, boost skin health, boost the immune system, prevent cancer, protect heart, prevent the inflammatory condition, boosts respiratory health and treat arthritis. Specifically, butternut squash (which happens to be my favorite from all) is a great source of vitamin A, and we know vitamin A is important for our vision, bone growth and reproduction system. What was I thinking of passing right by these nutritious vegetables! Squash is great for soups, and salads but also for something simple as homemade fries!

Just 3 ingredients for Butternut Squash Fries

  • 1 butternut squash
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon of sea salt


Butternut Squash Fries

Servings: 2

  • 1 butternut squash
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt


  • Preheat oven to 425F.
  • Peel the squash.
  • Slice squash in half and take out the seeds.
  • Slice into thin fries.
  • Mix squash slices with 3 tablespoons of extra virgin olive oil and 1 teaspoon sea salt. Spread on baking sheet and bake for 15 minutes, then flip over slices and continue baking for another 15 minutes. Broil for the last 3 minutes. Enjoy right away!
