There are many salads that are great for summer, but there is no better salad than using the ingredients straight from the garden. The juicy fresh tomato and cucumber right from the vine, and avocado that I had to buy because avocados don’t grow anywhere near me, sad. I love growing fresh herbs, a simple thing but makes a big difference in health, cilantro has been helping me keep my urine traction healthy. Do you grow any vegetables, fruits or herbs in your garden?

Even if your vegetables are not from the garden, avocado tomato cucumber salad will taste delicious, refreshing and satisfying. Why should you eat this salad? Because the tomatoes provide 20% of your daily vitamin A, cucumbers contain 19% of your daily vitamin K and avocados contain more potassium than bananas! Avocado, Tomato, and Cucumber Salad

  • 2 tomatoes
  • 1 avocado
  • 1 cucumber
  • 1 stem fresh dill
  • 1/2 onion
  • 2 Tablespoons mayonnaise
  • 1 Tablespoon lemon juice
  • salt to taste


  • Slice cucumber, tomatoes, and avocado into bite sizes.
  • Chop 1/2 yellow onion and 1 fresh stem of dill.
  • Combine ingredients together with 2 Tablespoons of mayonnaise, 1 Tablespoon lemon juice, and salt to your taste.
